Midori is a bottle of melon liqueur that I feel gets taken advantage of in most situations. It's really only used to turn drinks green or other combinatory colors. This, or it's just that melon liqueur. Well, it was high-time to pay our Japanese melon some more respect! Or at the very least, try it in a cocktail that wasn't just using it for it's body.
Horn of the Bulls was created by Will Lee, the director of beverages for both Detroit bars Grey Ghost and Second Best. It was created with a mindset that properly poses the bright melon characteristics of Midori post the year 2012 when it thinned itself out and became a bit more health conscious.
What he's essentially done is create a melon-like take on a Ramos Gin Fizz. But before you jump to the conclusion that it's just a green gin fizz, allow me to break things down a bit further. Whereas a Ramos Gin Fizz takes the sour and floral route with gin and citrus juices, Horn of the Bulls takes another route entirely.
No more citrus juice! No more gin! All we're keeping here is the fizz! Swap the base out with tequila and a pinch of salt because we love our margaritas! Throw in that melon liqueur and also some cucumber syrup because we like to preserve familial flavor ties. Lastly, don't forget some pineapple juice because we're still missing that other "juice" component for our final fizz.
What results is a pleasantly smooth drink reminiscent of a those Greek yogurt containers with the fruit included. It's bright and balanced, and I think gives that Midori bottle the limelight it deserves, albeit, without the lime.

Horn of the Bulls
- 1.5 oz (44 ml) Blanco Tequila (Montezuma)
- 1/2 oz (15 ml) Melon Liqueur (Midori)
- 1/2 oz (15 ml) Cucumber Syrup
- 3/4 oz (22 ml) Pineapple Juice
- 3/4 oz (22 ml) Heavy Cream
- 1 Egg White
- 1 Pinch of Salt
- Top with Soda Water
Method: Dry Shake, Wet Shake and Double-Strain
Garnish: Floating Lime Wheel
